CIEH (New) Level 2 Certificate in Food Hygiene (formerly Foundation)
This is a one day course (including examination) leading to successful candidates receiving a certificate in Basic Food Hygiene accredited by the Chartered Institute of Environmental Health.
The most simple level of food handler training which equips all food handlers with the knowledge to operate their employers business in a safe manner. All food handlers should be trained to at least Basic level food hygiene.

CIEH Level 2 Certificate in Food Hygiene Update (formerly Foundation Update)
This half day course updates the knowledge gained in the Level 2 course, and whilst working.

CIEH Level 3 Intermediate Certificate in Food Safety
This is a three day course (+ one day revision and examination) leading to successful candidates receiving the Level 3 certificate in Intermediate Food Hygiene accredited by the Chartered Institute of Environmental Health.
This level course is designed for those working in all food businesses at supervisory level. This includes traditional supervisors and team leaders but also anyone who needs a broad understanding of food hygiene as part of their work. Among those who would benefit are people involved in quality assurance; one to one instruction / training; customer complaints investigators; raw materials buying; sales.
Owners and managers in small to medium sized organisations may find the Intermediate level course will provide them with the knowledge to carry out their responsibilities effectively.

CIEH Level 3 Intermediate Certificate in Hazard Analysis
One of the main objectives of this course is to assist proprietors of food businesses to operate more safely and meet the requirements of current legislation by introducing a rational and realistic system of analysis.
Personnel attending this course must have a broad understanding of food safety issues prior to attending this programme. It is therefore strongly advised that prospective candidates have already completed the Intermediate Food Hygiene Certificate Course or its equivalent. This course is particularly suitable for owners, managers and sole proprietors; Supervisors; Team leaders; Trainers.

CIEH Level 4 Advanced Certificate in Food Safety
This is a five day course (+ one day revision and examination) and is designed for those in managerial or supervisory positions who require a good knowledge and understanding of food safety issues. Successful candidates will receive the certificate of Advanced Food Hygiene.
This course is designed with managerial accountability in mind. It is intended to equip persons in a supervisory or managerial position with adequate knowledge to ensure that their company operates in a hygienic and efficient manner.
This course syllabus is designed to change with legislation, technological and practical advances and as such it is the course most suitable for those wishing to keep up to date with these changes. Successful candidates are also able to tutor the Basic level course provided certain other criteria are met.

HACCP Training

- Level 2 HACCP: which incoporates a multiple choice examination. This is a one day course including the examination time;
- Level 3 HACCP / Hazard Analysis: this is also a one day course, however the delegate must develop a HACCP based procedure
- Level 4 (Advanced) HACCP: this course is designed for those in managerial or supervisory positions who require a good knowledge and understanding of HACCP and general food safety issues. This course is designed with managerial accountability in mind. It is intended to equip persons in a supervisory or managerial position with adequate knowledge to develop and implement HACCP plans within their work environment.
